Coconut Soba Lime Noodles

Ingredients 
  • 200g soba noodles
  • 1 can (400ml) coconut milk
  • Handful of Vietnamese mint leaves (or regular mint)
  • Juice of 1 lime
  • 2 cloves garlic, minced
  • 1 tablespoon chilli oil
  • Salt, to taste
  • Fried shallots, for garnish
Instructions 
  1. Cook soba noodles according to package instructions. Drain and set aside.

  2. In a blender, combine coconut milk, mint leaves, minced garlic, chili oil, and lime juice. Blend until smooth.

  3. Heat the blended mixture in a saucepan over medium heat until simmering.

  4. Place a nest of soba noodles on top of the coconut sauce in a serving bowl.

  5. Dress the plate with additional chili oil, lime juice, and fried shallots.
