Ingredients

200g soba noodles

1 can (400ml) coconut milk

Handful of Vietnamese mint leaves (or regular mint)

Juice of 1 lime

2 cloves garlic, minced

1 tablespoon chilli oil

Salt, to taste

Fried shallots, for garnish
Instructions

Cook soba noodles according to package instructions. Drain and set aside.

In a blender, combine coconut milk, mint leaves, minced garlic, chili oil, and lime juice. Blend until smooth.

Heat the blended mixture in a saucepan over medium heat until simmering.

Place a nest of soba noodles on top of the coconut sauce in a serving bowl.

Dress the plate with additional chili oil, lime juice, and fried shallots.
